September 28 - October 4, 2014

Sunday:  Pizza with Small Group

Monday:  Turkey, Apple, & Swiss Paninis with Spinach Salad

·          Chad had a softball game at 6:30, so he took the boys with him.  I needed to have a dinner that was easy to make for all of us at different times.  We had some yummy, whole wheat bread from the bakery that I didn’t want to waste.  So, I made paninis!  I buttered the outside of two slices of bread.  In the middle I spread a layer of blackberry preserves on one side.  Then I topped it with turkey, thinly sliced apples, and Swiss cheese.  I grilled them on the stovetop between to skillets.  They were delish!  I served them with a spinach salad.

Tuesday:  Rotisserie Chicken with Caesar Salad

·          Ranger had a 7:00 baseball game, so my mom brought over an easy dinner of rotisserie chicken and Caesar salad from Costco.

Wednesday:  Turkey & Spinach Lasagna, Spinach Salad, and Bread

·          I wasn’t feeling very well, so having a lasagna in the freezer saved our dinner on this evening.  J

Thursday:  Breakfast for Dinner:  Eggs, Bacon, Whole Wheat Toast, and Fruit

Friday:  Dinner Out with My Mom

Saturday:  Daddy Night – Hot Dogs & Fruit!

·          I had dinner out with some girlfriends, so Daddy was in charge!

September 21-27, 2014

This week was a little different, in that we had several evening activities this week.  So, our menu was very simple, basic, and fast.  :-)

Sunday:  Dinner with Our Small Group

Monday:  Sweet & Spicy Pork Tenderloin with Roasted Broccoli and Carrots

Sweet & Spicy Pork Tenderloin
This is a delicious slow cooker dish that takes about 3 minutes to put together.  Place a pork tenderloin in your slow cooker.  Then, top with half a jar of apricot preserves and half a bottle of a sweet and spicy sauce.  I chose the Sweet Chili Pineapple from Target.  Cook on low for 6 hours.  That's it!  I served ours with roasted veggies and warm, whole wheat toast!

Tuesday:  Daddy in Charge!
I had a ladies night with our church, so Chad was in charge!  He made hot dogs.  :-)

Wednesday:  Grilled BBQ Sausage with Homemade Macaroni & Cheese and Spinach Salad

Thursday:  Grilled Chicken with Sauteed Zucchini and Macaroni & Cheese

Friday:  Sliders with Sweet Potato Fries

Saturday:  Date Night!
Chad and I went out, and the kids stayed with Chad's sister and her family.  Everyone was happy!

September 14-20, 2014

Sunday:  Roast, Potatoes, Carrots, Spinach Salad, and Bread

·          We had some friends over after church, so I made roast!

Monday:  Honey BBQ Turkey Meatloaf with Roasted Brussels Sprouts and Carrots

·          We haven’t had this favorite in a while, and we just love it!  I can throw everything together in less than 10 minutes and then put it in the fridge.  About an hour before we are ready to eat, I can preheat the oven and throw it in, and after adding veggies, our dinner is ready!

Tuesday:  Sweet Chili Lime Chicken with Cilantro CousCous and Roasted Broccoli

·          This is an easy and flavorful dinner we all enjoy.  It’s actually one of the very first recipes I ever pinned on Pinterest (from Grumpy’s Honey Bunch blog).  The lime and cilantro flavors are amazing, and adding just a bit of red pepper flakes gives the dish a little zing!  (If you don’t have kids, you might add more red pepper.)  This is a great meal for a busy day because it can be done in under 30 minutes, easily.  J  The couscous can be a bit messy with kids, so you’ve been warned!

Wednesday:  My Birthday Dinner!  (Mommy did not cook!)

Thursday:  Basil Pesto Tilapia, French Fries, Spinach Salad

·          Thursday night Ranger has tball practice, so I need a meal that I can eat with Callen and Payton early, and then feed Ranger and Chad when they arrive back home.  Nights like this always make me thankful for Costco!

Friday:  Mommy, Callen, and Payton Date Night

·          Chad and Ranger went on an evening dove hunt, so I took my other 2 sweeties out for a little Chick-fil-a date.  J

Saturday:  Grilled Venison Kabobs with Roasted Veggies and Toast

·          We had our last venison meal from the deer Chad shot last year.  This meat was back strap, and I think it’s my favorite cut of deer meat.  Chad seasoned it and grilled it on kabobs with yellow and orange sweet peppers, while I roasted asparagus, Brussels sprouts, and carrots inside.  We had a movie night picnic with the kids and watched “101 Dalmations.”

September 7-13, 2014

Sunday:  Swedish Meatballs, Mashed Potatoes, Brussels Sprouts, & Cornbread

·          I stayed home from church with Callen who wasn’t feeling well.  So, I was able to make lunch and have it ready by the time Chad, Ranger, and Payton came home.  I actually just thawed out some Swedish meatballs from a previous dinner and warmed them with some fresh gravy.  I added mashed potatoes, roasted Brussels sprouts, and cornbread, and we all had a delicious meal!

Monday:  Callen’s Birthday Dinner….at Burger King!

Tuesday:  Breakfast for Dinner – Eggs, Bacon, & Banana Waffles  J

Wednesday:  Fried Red Fish & Trout, Potato Salad, & Roasted Broccoli

·          Our friend Jeff came over and brought some of the fish he has caught and had in his freezer.  Chad fried it (outside on the grill burner…yay!) after dipping it in yellow mustard and Zataran’s fish fry.  It’s so simple and so good!  We also added roasted broccoli and potato salad to the meal.  The boys may have eaten their weight in fish…no joke.  And, since Chad cooked the fish outside, my house didn’t smell like a seafood store!

Thursday:  Monterey Chicken, Butter Pecan Sweet Potatoes, & Roasted Asparagus

·          I absolutely love this meal.  Anytime I make this chicken, I always make it with these 2 sides…always.  It’s just a meal that makes me happy.  Chad really likes it too, and on this night, my mom was here with us.  I leave the tomatoes and green onions off of the kids’ chicken, but otherwise the boys usually eat this right up as well!  (Payton is another story…as usual.  J)  These sweet potatoes are so simple and scrumptious, I want to have them year round

Friday:  Dinner with Friends

Saturday:  French Bread Pizzas

·          I was really tired, but I didn’t want us to eat out.  So, I bought some whole wheat French bread and we all made our own pizzas.  The kids had so much fun!  They made pepperoni and mozzarella pizzas…Payton may have eaten all of her cheese during the prep.  Chad and I added other ingredients to ours like sliced sweet peppers, fresh basil, pesto sauce, sliced tomatoes, and garlic.  A great, easy dinner for all of us!

August 31 - September 6, 2014

Sunday:  Leftover Pasta & Macaroni with Spinach Salad and Bread

·         After church, we came home and warmed up the leftover Bolognese pasta bake from the previous night, as well as some homemade macaroni that I had made for the kids.  (By homemade macaroni, I mean hot elbow macaroni, shredded cheddar, a dash of milk, and a little butter.  I’m not kidding…that’s all, and they love it.)  Chad added some cut up turkey to the kids’ macaroni to give it some more protein.  I made a spinach salad with strawberries, feta, and almonds.  Everyone was happy with this easy Sunday meal!

Monday:  Labor Day – Fun with Friends!

Tuesday:  Pei Wei Take Out

·          This week for school, we are reading “The Story of Ping.”  I thought some Chinese food would be a great way to talk more about our lessons and (let’s be honest) give me an excuse not to cook!  J

Wednesday:  Salmon with a Balsamic Glaze, Roasted Broccoli, & Quinoa with Kale

Salmon with a Balsamic Glaze
·          My mom came over, and she brought some salmon and broccoli with her.  I used Pioneer Woman’s method of cooking the salmon, which is pretty fool-proof.  Then I made my sister-in-law’s recipe for balsamic glaze on the stove top and drizzled it over the salmon once it was done.  Obviously since I baked my salmon in the oven, I didn’t have salmon drippings like the recipe says below.  I added roasted broccoli and some quinioa with kale that I found at CostCo that is really delicious!

Glaze:
1/4 cup vinegar
1/4 cup water
1 1/2 T fresh lemon juice
1 T plus 1 tsp. brown sugar

Stir together in bowl.  Fry salmon in a skillet of butter.  Remove salmon. Carefully add mixture to skillet with salmon drippings.  Simmer until thick and boiled down to about 1/3 cup.  Top salmon with mixture and serve with orzo pasta w barely wilted fresh spinach. Yum!

Thursday:  Porcupines in a Skillet with Roasted Asparagus

·          I pinned this on Pinterest, and it looked like something my kids would eat.  They love beef, and they love rice, so this seemed like a safe bet.  It’s actually a great recipe for a busy evening, and stayed warm even though we ate at different times due to Ranger’s t-ball practice.  It definitely has the flavor of the onion soup, so if that’s not your thing, stay away from it.  J  Chad loved it, and had it for leftovers for lunch the next day over chips.  I really like the basis of this recipe, and I feel like I could play with the seasonings on this easily and have some different flavors.

Friday:  Porcupine Quesadillas with Homemade Whole Wheat Tortillas

·          Even with Chad having leftovers for lunch, we still had some of the beef and rice leftover (I have 3 small kids, mind you…those of you with actual real-size appetites in your house may not have leftovers like we do).  We really like these homemade whole wheat tortillas from The Lean Green Bean, so I made a batch so that we could have quesadillas.  We don’t mind leftovers, but it’s nice to try and change them up just a little bit so that we don’t feel like we are having the exact same meal 2 days in a row.  This marked the end of a very fun, but tiring first week of homeschool and preschool for our family, so we enjoyed these quesadillas while having a picnic upstairs in the media room for movie night!

Saturday:  Dinner at Mom’s:  French Dip Crescents with Homemade Sweet Potato Fries

·          My mom made dinner for us, and it was delicious!  She made these French Dip Crescents from Mama Loves Food, and there was not a bite leftover.  How can you go wrong throwing meat and cheese inside a crescent roll?  J  We did not have the horse radish, but we did have the au jus for dipping.  Yum, yum!

August 24-30, 2014

Sunday:  Orzo Pasta with Sausage, Spinach, Tomatoes, & Bell Peppers with Caesar Salad

Orzo Pasta with Sausage, Spinach, Tomatoes, & Bell Peppers

·          My friend Jamie brought this meal over to our house a few years ago, and I’ve loved it ever since!  It’s quick, easy, and healthy, which make it a family favorite for me.  It’s originally from Giada DeLaurentiis.  I used chicken sausage this time and also added some chopped up spinach to ours.  The full recipe makes quite a bit; I divided ours and gave half to a family from church who just had a new baby.  There was still plenty for us!

3 cups chicken broth
1 pound orzo pasta
2 tablespoons olive oil
2 links (7 ounces total) mild Italian turkey sausage, casings removed
1 garlic clove, minced
2 jarred roasted red bell peppers, cut into 1/4-inch strips
2 plum tomatoes, chopped
1/4 teaspoon red pepper flakes (optional)
2 tablespoons chopped fresh flat-leaf parsley leaves
Salt and freshly ground black pepper
1/2 cup freshly grated Parmesan cheese

1) In a large saucepan, combine 3 cups of water with chicken broth. Turn the heat to high and bring to a boil. Add pasta and cook until al dente. Drain, making sure to reserve 1/2 cup of the pasta water.

2) While pasta is boiling, get out a large skillet. Heat oil in it over medium-high heat. Add turkey sausage and cook around 4 minutes, breaking it up with the back of a spoon as you go. (It should be cooked through, but not quite browned.) Add garlic. Cook until fragrant, 30 to 60 seconds. Add bell peppers, tomatoes, and red pepper flakes (if using). Saute 2 or 3 minutes, until everything is heated through.

3) Combine pasta, sausage mixture, and 1/2 the parsley in a large serving bowl. Salt and pepper to taste. If you need the pasta water to moisten it up, add it now. Mix well. Sprinkle parmesan and the rest of the parsley on top. Serve.

Monday:  Chicken Pot Pie with Salad

Chicken Pot Pie
·          This was my mom’s first day of school (she teaches 8th grade), so I made dinner and brought it over to her house so we could all eat together.  This is one of the simplest chicken pot pie recipes I have ever seen.  It can also be adapted to be as convenient, homemade, or store-bought as you need it to be.  For instance, this time I used rotisserie chicken, frozen veggies, and potato soup from the store, but I made my own pie crusts.  You could easily make everything from scratch if you wanted to, or find each ingredient on the shelf of your grocery store.  It is a great recipe to make ahead of time, freeze, or take to people.  J

2 (10.75 oz) cans Cream of Potato Soup
2 cups veggies (frozen, fresh, or canned)
2 cups cooked chicken, diced
½ cup milk
½ tsp thyme
Black pepper
2 (9-inch) deep dish pie crusts
1 egg, slightly beaten

Combine soup, veggies, chicken, milk, thyme, and pepper.  Spoon into prepared pie crust, then cover with the top crust.  Crimp the edges to seal, slit the top crust, and brush with egg.  Bake at 375 degrees for 40 minutes.

Tuesday:  Dinner on the Road…

·          Chad was out of town, and Callen had t-ball practice at 6pm, so I made dinner for Ranger and Payton to eat at practice, and kept one in the cooler for Callen to eat in the car on the way home.  Turkey, cheese, zucchini muffins, grapes, and veggie straws!

Wednesday:  Breakfast for Dinner:  Spinach & Cheddar Scrambled Eggs, Bacon, & Biscuits

·          Chad was still out of town, so the kids and I had breakfast for dinner on a blanket while watching a movie.  J

Thursday:  Pasta Bolognese with Angel Hair Spaghetti and Garlic Bread

Pasta Bolognese
·          This recipe is from our Uncle Jerry and Aunt Suzanne (or Aunt Hosanna, as our kids call her!).  It’s a flavorful pasta sauce that also has some veggies in it.  The recipe says to chop everything, but in the interest of time (and my sore hands!), I threw all of the veggies in my mini food processor one at a time.  So, everything was chopped pretty small, which is actually better for my picky kids anyway.  I added some additional spinach to pack in a few more veggies.  We needed to run some errands in the late afternoon, so I actually made ours around 3:30 and let it simmer on low until dinner time.  This recipe makes quite a bit, so it’s plenty for a large family, or meals for a couple of days.

¼ cup olive oil
1 medium onion, coarsely chopped
2 garlic cloves, peeled and coarsely chopped
1 celery stalk, coarsely chopped
1 carrot, coarsely chopped
1 pound ground beef
1 (28-ounce) can crushed tomatoes
¼ cup flat-leaf parsley, chopped
8 fresh basil leaves, chiffonade
Salt and pepper
¼ cups freshly grated Romano or Parmesan cheese

In a large pot, add olive oil.  When almost smoking, add the onion and garlic and sauté over medium heat until the onions become very soft, about 8 minutes.  Add the celery and carrot and sauté for 5 minutes.  Raise heat to high and add the ground beef.  Saute, stirring frequently and breaking up any large lumps and cook until meat is no longer pink, about 8 minutes.  Add the tomatoes, parsley, and basil and cook over medium-low heat until the sauce thickens, about ½ hour.  Finish Bolognese with cheese.  Check for seasoning and serve hot.

Friday:  Pasta Bolognese Bake and Roasted Broccoli

Pasta Bolognese Bake
·          I had so much sauce leftover, that we had it again for dinner on Friday.  This time, I boiled some elbow macaroni until it was al dente.  I poured the drained pasta in a baking dish and sprinkled freshly grated Parmesan over it.  Then I poured over the Bolognese sauce and sprinkled mozzarella on top of that.  I baked it in a 350 degree oven for about 20 minutes until the sauce was warmed through and the cheese was melty and delicious!

Saturday:  Basil Pesto Tilapia, Fish Sticks, Roasted Green Beans, and Fries

·          Earlier during the day, we celebrated our Callen Ty’s upcoming 4th birthday with a party at our neighborhood pool.  I was pretty exhausted by dinner time, and Chad was doing some painting in our house, so it was a freezer/Costco kind of night.  I have Basil Pesto Tilapia and fish sticks from Costco that I try to always keep on hand.  I also buy Costco’s big bag of organic frozen green beans and whichever “healthy-ish” version of frozen French fries they have.  J  I threw everything on foil-lined baking sheets and into the oven, and in about 25 minutes, we had a dinner that everyone was happy with!  And clean-up was a snap!

August 17-23, 2014

Sunday:  Market Street Green Chili Chicken Enchiladas with Avocado, Tomato & Basil Salad

·          Chad was out of town, Payton was sick, and my mom took the boys to church with her.  Market Street to the rescue!  They have wonderful prepared foods, and their enchiladas are some of my favorite.  There was enough for Mom and I to share for lunch, and I made an avocado, tomato and basil salad to go along with it.  The kids ate sandwiches, and were perfectly happy!

Monday:  Breaded Spinach and Mozzarella Ravioli with Roasted Green Beans

·          The boys had dinner with some friends, and Chad was still out of town, so it was just my Payton girl and me for dinner.  Payton still wasn’t feeling well, so I only made dinner for myself and let her have toast and bananas.  We have some spinach and mozzarella ravioli in the freezer, so for an easy, one-person dinner, I dipped a few in a beaten egg and then I dredged them in bread crumbs.  Then I sautéed them in a little oil until they were brown and crispy.  I dipped mine in a little marinara sauce.  Yum!

Tuesday:  Family Dinner at Chad’s Parents’

Wednesday:  Dinner Out with Friends for a Birthday  J

Thursday:  Crock Pot “10 Chicken” with Roasted Broccoli and Whole Wheat Garlic Toast

Crock Pot “10 Chicken”
·          This is a wonderfully easy recipe that can be made ahead of time and stuck in the freezer for a quick meal.  Marinate chicken in soy sauce, Italian dressing, and garlic powder.  You can marinate it for only an hour or two before grilling it, or, in this case, I had it in the freezer and took it out and threw it straight in the crock pot on low all day.  When we were ready to eat, the chicken just fell off the bone.  It was also tasty the next day as leftovers for lunch!

Friday:  Slow Cooker BBQ Pork, Sweet Potato Fries, and Baked Beans

Slow Cooker BBQ Pork
-          1 pork roast
-          1 jar BBQ sauce
-          1 Coke

Place the roast in your slow cooker and pour over the coke and the BBQ sauce.  Cook on low 7-8 hours, then shred the pork and let it simmer in the sauce until you are ready to eat.  We had ours as sandwiches, but tacos and nachos are also great options.

Saturday:  Hot Dogs, Roasted Green Beans, and Cantaloupe

·          A fun evening with friends means a simply, family friendly meal.  J
