I had some thin-sliced chicken breasts, so I decided to make an easy breaded and baked chicken for our dinner. I just mixed up Panko bread crumbs with fresh parmesan, garlic salt, and pepper. Then I dredged the chicken in the crumbs, giving both sides a good coating. I placed the chicken breasts in a sprayed baking dish and baked them at 400 for 15 minutes. I turned the chicken over and then baked for another 10 minutes, until the chicken was fully cooked. The cooking time will definitely depend on the thickness of your chicken! <br />
<br />
After the chicken was done, I topped it with some sliced cherry tomatoes that I had mixed with a little olive oil and some AMAZING, fresh basil from my friend Dana! This last part really put this chicken dish over the top. My kids ate their chicken plain, so the good stuff on top was just for Chad and me. :-)<br />

Tonight's tacos...venison! I made <a href="http://www.theleangreenbean.com/homemade-whole-wheat-tortillas/">homemade tortillas </a>as well. They are quite simple and really delicious. I made half whole wheat, half white flour. Our taco nights are always interesting because everyone's plates look just a bit different. The plate in the picture is mine. I made a taco salad, a black bean and cheese quesadilla, and had a side of roasted veggies.<br />

I had chicken but really hadn't made a plan for it, and our day was packed full. So, I found this simple, ONE PAN recipe on Pinterest, and dinner was ready in 30 minutes! I do wish the chicken had browned up a bit more, so I would do something about that the next time, but this was so easy and delicious! You can use any seasonings you like really. Clean up was also a breeze!<br />

There's no recipe for this. I just saute whatever veggies I have on hand, cube and cook chicken, make rice, and then throw it all together with seasonings. I used some rice vinegar, sesame oil, and soy sauce to give this some Asian flavor.<br />

This was a quick, delicious meal before heading out to church. I used a jar of sauce and added that to some browned Italian turkey sausage. For the zucchini, I sliced it a little (but not too!) thin, drizzled it with olive oil, salt, and pepper, and roasted it for about 15 minutes at 400 degrees. Then I sprinkled on some fresh, shredded parmesan and roasted it for another 5 minutes or so.<br />

This was a simple meal as I already had homemade marinara and some rotisserie chicken in the freezer. All I had to do was thaw and warm those while boiling some pasta. Dinner was done! I used lentil and quinoa pasta, which was delicious.<br />

Chad was having dinner out, so it was just the kids and me. I made a foil-wrapped, baked pesto salmon, which was so simple and delicious! I placed a piece of salmon on a sheet of foil; then I drizzled on olive oil and sprinkled salt and pepper. Then I grabbed some jarred, prepared pesto from the fridge and spread out a couple of spoonfuls over the salmon. I wrapped it up in the foil and baked it for 15-18 minutes at 400 degrees. Check your salmon around 15 minutes. If it flakes easily, it's ready to go! The thickness will change cooking times. </div>

Chad offered to grill, and I never say no to that! He and I had bacon-wrapped dove while the kids had hot dogs. We all enjoyed grilled zucchini and brown rice! This was another meal we ate out on the porch. We love beautiful evenings!</div>

Wednesdays can be a little rushed in the afternoons, but a pasta dish is pretty easy to whip up. I had some diced, grilled chicken in the freezer from a previous meal. I thawed that chicken, along with some homemade marinara from the freezer, and I boiled some whole wheat pasta. I also sauteed some fresh broccoli and mixed everything together. Dinner was done! I had a can of biscuits that I decided to cut up into small chunks and brush on a little melted butter with garlic before baking. The bread was delicious!<br />

Chad was gone for the night on a church men's retreat, so the kids and I had a date night. Our first stop was Chick-fil-a for dinner and a little play time, and then we went and saw the Frisco Children's Theater production of <i>Willy Wonka & The Chocolate Factory</i>. It ended up tasting just like a rotisserie chicken from the grocery store! I will make this again, but I will likely do boneless just to make it easier on everyone. :-) I roasted some zucchini and sweet potatoes to go along with the chicken. Since everything was roasted on pans that I lined with foil, clean up was a breeze!<br />

A bonus to this meal was the leftover chicken...I was able to use it on my salads for lunch this week.<br />

We had two baseball games back-to-back, starting at 6:00. So, I grabbed Subway sandwiches for everyone around 4:30, and then people could eat whenever they were hungry before, after, or during games. <br />

<b>Wednesday, May 3:</b> Kids - Hot Dogs & Hamburger, Me - Baked Sweet Potato & Hamburger Patty<br />

Chad was out of town for work, so I made a simple dinner for all of us. I keep whole wheat hot dog and hamburger buns in the freezer so that I can easily thaw out a few whenever I need them. I used my skillet to warm a hot dog each for Callen & Payton, and an Angus beef hamburger patty (frozen from Costco, and SO good!) for Ranger and another for me. I rounded out the kids' plates with fresh fruits and veggies. I baked a sweet potato to add as a side for my beef. Everyone was full and happy!<br />

After a busy day of baseball games, pedicures with my girl, and swimming with some neighbors, leftovers were the perfect meal. Chad diced up the chicken leftover from the night before and sauteed it with a little BBQ sauce. I made everyone a little salad and fruit, warmed up some mac-and-cheese for those who wanted it, and dinner was done!<br />

One more meal made of leftovers! After church, I roasted some green beans, broccoli, and carrots. While they were roasting, I cut up the rest of the leftover chicken and tossed it with a little olive oil and soy sauce to add some moisture. Then, I tossed it together with the veggies to warm in through. Adding a little brown rice rounded out our meal.<br />

As with any holiday meal, there are usually leftovers a'plenty! We had quite a bit of delicious ham, so Chad was genius and suggested a breakfast casserole. I mean, we ALWAYS have eggs thanks to our girls out back, and I happened to have a can of crescent rolls in the fridge. So, I made our meal using <a href="http://www.kevinandamanda.com/breakfast-casserole/#_a5y_p=2003173">this recipe from Kevin & Amanda</a>, except that I subbed ham for sausage, and I also used 8 eggs instead of 6. <br />

Another holiday leftover...tamales! We are down to 2 4-count packages of tamales leftover from Christmas Eve. It's actually a good thing because they actually get hotter each time we eat them! Ha! I suppose the spices become more potent with time. So, the kids can't eat them at all. I think I made chicken nuggets for them. I had to put a little sour cream and avocados on mine to tone down the spice a bit too. I also served it on our best china so as to save me a bit of time since we have small group at 6:30.<br />

Baking sweet potatoes opens up a world of options! I bought a rotisserie chicken from the store and tore off the chicken. For Chad and me, I made a baked potato bar. We topped ours with chicken, black beans, salsa, sour cream (I used plain Green yogurt), cheese, avocados, and tortilla chips. <br />

My kids aren't big fans of foods stacked on top of each other, so their plates looked a bit different. :-) They prefer roasted sweet potatoes to baked, so I sprinkled on a little cinnamon. This meal was incredibly simple, but also really delicious!<br />

The Frisco Baseball Association has a night at the Frisco RoughRiders (our minor league team) each season. The boys were able to walk on the field with their teams, and our tickets included hotdogs, chips, and drinks!<br />

We came home after church, and I made a simple but healthy meal we all enjoy for lunch. Baked "Grilled" Cheese Sandwiches! Whenever I make more than 2 grilled cheeses, it's really so much easier to assemble them and lay them on a foil-lined cookie sheet. Then you top it with another sheet of foil and another cookie sheet on top of that! I place mine in a cold oven and then heat it to 400. Usually, they are perfectly golden when my oven is done heating up! Perfect!<br />

Too Crafty’s Best Pot Roast Ever</a><span style="text-indent: -0.25in;">.</span><span style="text-indent: -0.25in;"> </span><span style="text-indent: -0.25in;">I
saw the Six Sisters recipe first and liked the idea of having pot roast sliders
rather than traditional roast with sides.</span><span style="text-indent: -0.25in;">
</span><span style="text-indent: -0.25in;">But, I didn’t want the flavor of salsa, so I used a Coke instead, as
suggested by You’re Too Crafty. </span><br />
<br />
So,
I put my roast in the crock pot around 6:00 that morning before getting ready for church. Then I
mixed 1 packet of onion soup mix, 1 packet of Italian dressing mix, & 1
packet of Au Jus gravy mix with 1 cup of water.
I poured that on top of the roast, then poured a Coke on top of
that. I cooked it on high for about 90 minutes,
then on low for 3-4 (my slow cooker cooks pretty hot). It was SO, SO GOOD! The house smelled amazing when we arrived home from church! Seriously, the gravy is so ridiculously
delicious that I could have downed it with a straw. <span style="font-family: "wingdings";">J</span><br />
<br />
I
used King’s Hawaiian Rolls, spicy mustard, & Havarti cheese to make our
sliders. We also had plenty of food, so we were able to invite another couple from church over for lunch. I actually forgot this time, but it's a great idea to pour the gravy in small bowls
so we could dip our sliders into it. I’m
not kidding…these are DELISH! Make them! As a bonus, we not only had leftovers for
dinner the next night, but I also had it for lunch once or twice.<br />

Wednesdays are usually one of our two busiest days of the week with preschool for Payton, her dance class, and practice for both boys. But, we had rain the night before, so the fields were too wet for practice! So, we ended up at our friends' house for pizza and pool time. :-)<br />

I mean...so much randomness. But, we didn't have enough venison left over to make a full meal for our family of 5, so I added in some scrambled eggs to round out the meal. I made what I called tostadas out of tortillas that I cut into triangles and browned and crisped in the oven just a bit before topping with venison and cheese. Then, I broiled those just long enough to melt the cheese. This meal was a total hit with everyone!<br />

We had eaten pizza with our friends only 2 nights earlier, so instead of pizza for family movie night, I asked Chad to grill some venison. I served it along with macaroni-and-cheese, sauteed zucchini, & rolls. For dessert, we had fresh Cutie orange slices with dark chocolate chips! Yum!<br />

Ranger had a baseball game at 6, so he had an early dinner of leftover hot dogs with fruit at home, and I took Callen's and Payton's dinner to the game. Chad was out of town.<br />

<b>Wednesday:</b> One More Game Night Meal...<br />

This time is was Callen's turn for a 6:00 game, so we did almost the same thing, except the dinner I took to the game for Ranger, Payton, and me was a bag full of fruit, proteins, and a few salty and sweet snacks to go along with it.<br />

<b>Thursday: </b>Chicken & Cheese Quesadillas<br />
<br />
Chad was out of town for work again, and the kids and I were gone all day on a field trip to the zoo with some of our homeschool friends. We had the best day!! But, arriving back home tired and smelly at 5:40 doesn't really inspire much cooking from me. Thankfully I had some rotisserie chicken in the freezer already shredded up. I try to always keep the Tortilla Land ready-to-make tortillas on hand because they can be used for so many meals. It only took about 15 minutes to thaw out and warm up a bit of chicken, make tortillas, shred some cheese, and assemble our quesadillas. I actually used the chicken and made a big spinach and kale salad for myself. I served the kids quesadillas with some apples and fresh spinach.<br />

Meatballs are a pretty quick thing to whip up when you want a healthy meal. For these, I used lean, ground turkey, an egg, seasonings, oatmeal, and parmesan cheese. I baked them at 400 for about 30 minutes. Then I topped them with a small slice of monterrey jack cheese and broiled them for just a minute or two. I actually meant to thaw some marinara to pour over them, but I completely forgot!! I'm really loving Brussels sprouts right now, so I roasted some with a little zucchini to add to our hot dog dinner. Since I was feeling kind, I only gave the kids zucchini and left the Brussels sprouts for Chad and me. And, I actually felt really hungry while I was preparing dinner, so I ate my hot dog bun (I did buy whole wheat for us on this night) with a little dipping sauce of olive oil, balsamic vinegar, and pepper while I cooked. :-) Our hot dogs were scrumptious and nitrate free. </div>

It was our usual Friday night pizza and movie night, but I wanted to make my portion of our Costco pizza a bit healthier, so I added spinach and tomatoes and drizzled that with a little olive oil before baking. Since Chad was home after being gone for several days, I wanted us to have a delicious meal that felt fancy without all the fancy work on my part. ;-) This <a href="http://damndelicious.net/2016/12/16/sheet-pan-steak-and-veggies/">recipe from DamnDelicious for Sheet Pan Steak & Veggies </a>seemed like a good one to give a shot! I actually really love her recipes, even though her blog name is a little crass. I also truly love a meal where clean up takes less time than actually eating the meal. :-) And, it was quite delicious! Since the kids had pizza on Thursday, we changed up our usual Friday night meal. They had a simple but healthy "kid friendly" meal, and Chad and I had baked sweet potatoes. We topped them with ground turkey, black beans, feta cheese, & salsa for a truly delicious meal!!<br />

I found a seasoned turkey tenderloin from Jenny O at Tom Thumb, and I stuck it in the crockpot around lunchtime and cooked it on low all day. When we arrived back home, dinner was ready in a snap! I just sliced up the turkey and added some fruits and veggies already cut and washed and ready in the fridge.<br />

I found some heart-shaped pasta at Aldi a few weeks ago, and I grabbed it for our family Valentine's Day dinner. My mom also came over. We had quite a bit of turkey left over from the night before, so I added that some some homemade marinara. I also roasted some Brussels sprouts in a little olive oil, salt, & pepper at 425 for 20 minutes or so. Once I pulled it out, I topped it with a mixture of 2 tablespoons butter, 2 tablespoons soy sauce, and 2 teaspoons balsamic vinegar. It's so, so yummy on roasted veggies....our Aunt Suzanne shared the recipe with us a few years ago, and we've loved it ever since! I also made garlic toast using whole wheat bread from the pantry. Happy Valentine's Day to us!<br />

We had leftover chicken from the night before, and also the Chili Lime Chicken from late last week. So, I sauteed some sliced carrots and zucchini in a little olive oil and a tablespoon of butter. Once those were brown, I added in the diced chicken from both leftover meals, and also the sauce from the Chili Lime Chicken. I splashed in a bit of rice wine vinegar and soy sauce to add some Asian flavorings, and then I tossed it all together with brown rice and a few diced bell peppers. It was a one-pan meal that was ready in no time, and as a bonus, it was truly delicious! <br />

"10 Chicken" is a recipe from my cousin, Britney, and it is excellent on the grill or crockpot. Typically, I buy a huge package of chicken and marinate it. For the first meal I grill it, then I put the remainder of the marinated, raw chicken, I freeze. Then when I am in need of an easy meal, I pull the frozen chicken out and dump the whole frozen contents into my crockpot and cook on low for 4-6 hours. It is tender and delicious! We used boneless, skinless thighs this time around.<br />

I had some tilapia in the freezer, and I needed a quick meal, so I went to good ole' reliable Pinterest and found this simple recipe <a href="http://www.shrutisdilectabledilites.com/">Shruti's Delectable Delights</a>. It was truly delicious! I also sliced thin a huge sweet potato and drizzled it with a little olive oil and sprinkled some season salt. I roasted these on a foil lined baking sheet for about 20-25 minutes, turning them over halfway through. While the tilapia and sweet potato chips were in the oven, I steamed some broccoli. This simple, healthy dinner was incredibly easy and also quite tasty. <br />

first 7 ingredients. Pound out the chicken in a Ziploc bag until thin.
Sprinkle mixture on both sides of the chicken. Heat butter and olive oil over
medium high heat. Cook chicken 5 minutes on each side. Remove chicken and add
lime juice and chicken broth to pan. Whisk the mixture around until it is
reduced, mixing up the brown bits. Pour over the chicken. Enjoy!<o:p></o:p></div>

Chad made gumbo a couple of months ago, and we had a few bags frozen in the freezer. This was a perfect day thaw one out and warm it up for dinner. We served it with brown rice.<br />

I had a bag of homemade marinara that I thawed a bit and warmed on the stove...I also added in some chopped up turkey meatballs that were also frozen from a previous meal. :-) After boiling some whole grain pasta and roasting some green beans, our meal was done! I made <a href="http://johnstontummies.blogspot.com/2014/03/march-16-22-2014.html">my tried and true turkey meatloaf recipe</a>, but this time I baked it in my muffin tin. I topped the kids' portions with ketchup and for Chad and me, I used BBQ sauce. Simple, healthy, and done in no time!<br />

We had eaten out every meal the day before, so I asked Chad to grill instead of ordering pizza like we typically do on Friday night. He was in the zone working on an outside project, so I actually made the kids some chicken nuggets and served them alongside some roasted sweet potatoes and fresh veggies. Once Chad finished his project, he grilled our steaks and I quickly sauteed some spinach and topped it with some fresh parmesan cheese. Everyone was really happy with this meal!<br />

Chad wanted to grill duck for dinner, and I am always happy any night he wants to grill. For our sides, I made <a href="http://realhousemoms.com/low-carb-cauliflower-breadsticks/">Cheesy Cauliflower "Bread" from this recipe</a> I had seen on Facebook, via Real Housemoms. Now, no one would actually be fooled that this was truly bread, but Chad and I really enjoyed it! We have a few ways we love eating cauliflower, so it's nice to add a new one to the rotation. As for the kids, Callen loved it and gobbled it down, Ranger tolerated it and ate what was on his plate, and Payton ate the 4 bites I required of her. :-) I ate the leftovers for lunch a few days later (after warming in my toaster oven), and it was still quite tasty!<br />

I love the <a href="http://www.skinnytaste.com/crock-pot-italian-turkey-meatballs/">crockpot marinara from Skinny Taste</a>, and I made a double recipe so we could have some for dinner and so I could freeze some for future meals. It's so simple, and you can customize the spices and herbs to your liking! Then I lightly breaded some chicken breasts with bread crumbs, salt, pepper, garlic powder and shredded parmesan cheese and browned and cooked them in the skillet. Callen took care of spiraling the zucchini to make the zoodles for us, and I did a quick saute with a little olive oil, salt & pepper. This dinner was full of flavor, healthy, and, while it used several pots, its actually quite simple. :-)<br />

<b>Thursday: </b>Turkey Meatballs with Roasted Sweet Potatoes & Kale Salad<br />

I made the meatballs with ground turkey, parmesan, salt, pepper, Italian herbs, and an egg. I baked them (loosely covered with foil) at 400 for about 40 minutes. Then we all chose whatever sauce from the fridge we wanted on top of them. These are also great to make more than you need and have as leftovers and also have for your freezer. They go well in any sauce, diced up for tacos or quesadillas, or in a soup!<br />

It was both fast and easy, and Chad and I truly enjoyed it. The kids had eaten dinner a little earlier, so I was saved the groaning and moaning that their dinner included soup. ;-) There was just enough leftover for me to have for lunch the next day. I even sprinkled on a little freshly-grated parmesan...yum! As cauliflower doesn't have as much protein as Chad and I require for a typical meal, I also made some grilled cheese sandwiches for us. It was the perfect cold weather meal!<br />

Sometimes you need a healthy meal, but don't have time to make it from scratch. I had some turkey meatballs I purchased at the grocery store in my freezer. I baked them with a little BBQ sauce while roasting sweet potatoes and green beans in the oven at the same time. This meal was a hit with everyone in my family, and I liked how easy it was for me on a busy day.<br />

<span style="background: white;">Prep by chopping onion, bell pepper, celery, and garlic (trinity) and set aside in a bowl. Cut sausage into ¼ slices and set aside with duck breasts and shredded turkey/chicken.</span><br /><br /><span style="background: white;">Add small amount of oil to hot dutch oven type pot and sear the duck and sausage together for about 6-8 minutes. Remove meat, set aside in a bowl, and proceed to roux. To make roux, add the ½ cup oil to pot and let get hot over medium-high heat. Sprinkle the flour over the oil, add 2 tablespoons of butter and cook over medium heat, whisking constantly, until rich brown, about 20-30 minutes. Be patient, whisk constantly, and do not let burn. If you don’t have time for this step, buy a jar of ready-made roux.</span><br /><br /><span style="background: white;">Add the remaining 3 tablespoons butter, along with the trinity mixture and cook for 10 minutes, stirring with wooden spoon until mixture well coated and onions start to wilt. Add Worcestershire sauce, salt and pepper, Tony Chach to taste. Add 4 cups broth, 2 cups water, and bay leaves while whisking constantly. Add the chicken and sausage. Bring to a boil, then reduce the heat to low, cover, and simmer for one hour. Add okra. Cover and simmer for 45 minutes or until ready to serve. Serve over steamed rice, top with green onions, and taste before adding hot sauce to preference.<o:p></o:p></span></div>

<b><u>Turkey Chili</u></b><br />
This is based on a chili recipe from my sweet mother-in-law that I have in a church cookbook I bought a decade ago. It's referred to as <i>Prestoncrest Chili</i>. It's pretty much my go-to chili recipe that I can alter however I like and have simmering on the stove top or in a slow cooker in no time. <br />

3 lbs lean ground beef, chicken, turkey, or venison<br />
3/4 cup chopped onion<br />
1 T salt<br />
1 T cumin powder<br />
1/2 tsp garlic powder<br />
1 1/2 tsp black pepper<br />
1 T paprika<br />
3 T chili powder<br />
1 (15-oz) can tomato sauce<br />
1 (32-oz) can chopped tomatoes<br />
2 (15-oz) cans beans (Ranch style, black, pinto)<br />

Brown meat and onions. Add all other ingredients and simmer together. Serves 12.<br />

* I tend to alter this recipe based on what I have on hand, and often I make a half-recipe if it's only for my family. This freezes really well, so making a full recipe is nice too! I've also added a tablespoon or two of brown sugar at times and knocked down the spiciness with smaller amounts of chili powder since my kids won't eat super spicy foods. The kids love eating their chili in the scoop-type tortilla chips with shredded cheese. I love mine with cornbread muffins, sour cream, and shredded cheese. Yum!<br />

The Cowboys were playing, and we decided to start decorating for Christmas. So, I made a simple dinner of baked chicken tenders accompanied with quinoa & kale (frozen packet from Costco...4 minutes in the microwave!) and fresh veggies.<br />

There wouldn't have been quite enough for all 4 of us, so for myself, I heated a little olive oil in a pan on the stove and added in a few chicken raviolis tossed in a small amount of Italian bread crumbs and parmesan cheese. I "fried" them lightly on both sides and served them with marinara sauce.<br />

We have some smoked turkey in our freezer that needs to be eaten before we receive another smoked turkey this year. :-) So, I thawed some during the day. For dinner, I diced up a sweet potato and sauteed it in a little olive oil with a few sprinkles of season salt. Once the potatoes were browned and soft, I added in the smoked turkey and a can of drained and rinsed black beans. Then I simply let it all heat together! I had some freshly made tortillas from Kroger, so we had our "hash" as tacos and burritos. This was a seriously yummy meal that was packed full of flavor. I could see us repeating this with leftover Thanksgiving turkey next week!</div>
